Does anyone know of any good review papers/text books etc that discuss,
in
detail, aspects of drug stability in biological matrices (blood, urine,
plasma, serum) and methods involved in such investigations?

Paul,
Timm et al "A new approach for dealing with the stability of drugs in
biological fluids", J Pharm Sci, 1985: 74:972-977 is interesting. It was
listed as a reference by the FDA in their 1998 draft guidance on method
validation.
