I'm wondering what the code for the modulus function or the remainder
value after a division in NONMEM. This function is very useful in
setting-up recurring step function.

Dear Jarett,
The modulus as such is not available in NONMEM's abbreviated code. You
can however use
x-y*INT(x/y)
to get the modulus of x after division by y. Generally, allowed
functions can be found in the section 'Abbreviated code' of the html
help of NONMEM.
