Can we perform blood stability using frozen blood sample?

I don't think so. Once blood is frozen then defrosted the cells have ruptured.

On frozen plasma or serum it is possible to perform stability studies not on the whole blood.

yes, usually it is not even advised to do the plasma protein binding
studies in frozen plasma for you can see the appearance of junks in that
plasma and when it comes to blood, it gets frozen and once thawed to
room temperature there is every chance the cells may lyse and we end
up in faulty conclusions.
